Product Profile: King Harvest Lemon Hummus

I’ve known about King Harvest Hummus for a few years. They have a storefront that is located in SE Portland, on Morrison Street, although I’ve never been in it. Their hummus is sold all over Portland, and I have tried quite a few of their different flavors. The company started out in 1976 as a “hippie” (their words) grocery store, then moved and morphed into a juicing store, and finally became the hummus and coffee manufacturer that we know and love today.
I just picked up their Lemon Hummus on my last trip to the co-op. I tend to like hummus that has a little extra kick, whether it be from the spices or tartness, and this particular one did not disappoint. My other favorites by King Harvest are Roasted Garlic Hummus, Black Bean Hummus, and Regular Hummus. I can’t wait to try their Balsamic Vinegar flavor, based on a tip from an ACG employee.
The company is family-owned and -operated and the hummus is dairy, gluten- and GMO-free, so I can’t really think of a better company to support. King Harvest Hummus (in myriad flavors) is available at ACG for $3.49 each.

Lemon-y Poppy Seed Dressing

There is something so summery and satisfying about lemon poppy seed dressing. That is why, I suppose, my craving for the creamy treat rocketed from dormant to full alert when summer previewed in Portland this weekend. Wasn’t the sunshine divine?
Dress your veggie or fruit salad, side, or main (and hopefully not your just-out-of-storage white summer shorts) with this refreshing sauce. When those little seeds go poppy on your thrilled taste buds, swallow them down, then let out a laugh. It’s really fun.
After your meal, imagine all of the health benefits you may glean from your meal topper. Raw and local honey soothes the digestive tract and has anti-fungal and anti-viral properties. Raw apple cider vinegar contains beneficial bacteria. Lemon juice induces a field day for your senses and provides vitamin C.
And let’s not forget our featured food, the poppy seed. According to author Mark Cunningham, poppy seeds have long been used as a folk remedy to aid sleeping, promote wealth and fertility, and to induce magical powers of invisibility. Whoa! If that isn’t worth a trip to the Co-op bulk spice section…
The goods*
¼ cup homemade, egg-full or vegan mayonnaise
1 Tbsp + 1 tsp Dijon mustard
¼ cup olive oil
¼ cup raw apple cider vinegar
1 Tbsp fresh-squeezed lemon juice
1 Tbsp + 1 tsp raw local honey, sourced as close to home as possible
2 tsp shallots, finely chopped
2 Tbsp poppy seeds
1 tsp garlic powder
dash freshly ground black pepper

Directions
Add all ingredients to a wide-mouth canning jar, cover, shake really well, and serve it up. Refrigerate the leftovers, if you have any.
