Make Room for Mushrooms

My name is Nick,….and I have a mushroom problem. The problem is that they are so good that I want them in everything! This will be my first entry on my new column “Make Room for Mushrooms” by my pen name Shroom’n Neumann. I’ll keep you abreast about my adventures with mushrooms. All I ask is that you, reader, do the same.

So, produce folks let me know that portobello mushrooms were going to be on sale this week, starting Tuesday at $5.49/lb for organic, farm direct (from Hoodriver organics) portobellos.

Let’s get back to portebellos: I think that together you and I can perfect the portobello burger.

This is a 2 prong strategy: Let’s find the best way to cook and dress our portobollo burgers

  1. Mushroom Cooking
  2. Putting together a killer team of toppings

Here is my lists of ingredients, and I hope you will share yours as well.

1.Mushroom Cooking:

  • Grill, Bake or Fry

Here are some things I throw into my marinade:

Olive oil, black pepper, thyme, basil, white wine, vinegar, and shoyu or tamari. I like my portobellos super juicey. If you do too don’t be afraid to give ‘em a good marinading.

2.Toppings:

  • Vegenaise, mustard, avocado, fried onions, tomatoes (when they are in season), and some type of leafy greens.

Eat these with oven baked potato wedges dipped in BBQ sauce, and you won’t be sorry.

Attn: North Portland! There’s a New Farmer’s Market in Kenton

“After seven wonderful years of bringing fresh food to the residents of North Portland, the volunteers who poured their time and energy into the Interstate Farmer’s Market decided to bring the market to an end.   Your support of our local farmers and food producers was always appreciated and they enjoyed the opportunity to serve such loyal customers.

Although the Interstate Farmer’s Market won’t be around this season, we are delighted to announce that Portland Farmers Market will be opening a new market nearby in the Kenton neighborhood this June.  Below you will find a few details about this market:
  • WHEN: Fridays, 3-7pm, June 1 through September 28
  • WHERE: In the heart of Kenton district in North Portland on N. McClellan Street at Denver Avenue.  Map it
  • WHAT: Up to 35 vendor stalls filled with fresh, peak-of-season produce, proteins, baked goods and other artisan food products in a festive, street-fair atmosphere, complete with musical entertainment.
To all the Interstate Farmers Market shoppers, we invite you to hop on the MAX to join the Friday fun and find fresh produce just 5 stops away from the Overlook Park Station! There will also be parking nearby for those who drive.”

This is a really great opportunity for the residents of North Portland to get access to fresh produce and other foods.  It can feel like a bit of a food desert up there, so one can guess that this will be a welcome summer addition to the neighborhood!
